White sourdough (****)

I was in a hurry for loaf 35 and it didn’t work out. From the 5 star loaf 34 to a 1 star loaf 35. Getting carried away. Onwards.

~1930
  • 80g starter
  • 50g strong white flour (Nelstrop)
  • 80g water

20 minutes on menu 32. There’s still a bit of unmixed flour. Worry about that later. If at all. On to menu 30 for a rest.

~2120
  • 340g strong white flour (Nelstrop)
  • 60g Cotswold Crunch
  • 260g water
  • 15g EVOO
  • 3g salt

Menu 32 for a mix then menu 10 overnight.

Result

Not bad. Still a little dense.
