White and Cotswold Crunch sourdough (***)

Out for a murder mystery evening at Ushaw College tonight. Timings will just have to go with the flow. Trying wholewheat flour instead of white in the premix tonight.

before going out …
  • 90g starter
  • 70g wholewheat flour (Marriage’s)
  • 80g water

5 minutes on menu 32 then on to menu 30.

getting back home …

Well now, if memory serves, it was something like …

  • 200g strong white flour (Nelstrop)
  • 200g Cotswold Crunch
  • 280g water
  • salt and EVOO I guess

Menu 32 for 5 minutes then menu 10 overnight


Ok, could’ve been a lot worse. Cotswold Crunch does seem to dominate loaves and probably needs to be used sparingly.
