  • 100g starter
  • 70g swf (Nelstrop)
  • 70g water

Menu 32 20 minutes then a few more minutes nudging the unmixed flour in with a wooden spoon. Don’t really think it makes any difference.

around 1030am

That’s just under 2 hours resting on Menu 30. I’m trying the rapid XL program so that this is ready for lunchtime. There’s a fair amount already there in the premix – around 240g – so let’s try …

  • 400g strong white flour (Nelstrop)
  • 300g water
  • 20g EVOO
  • 9g salt (!) – used a big spoon and tipped in without realising how much it was.

Menu 32 for a 5 minute mix then on to Menu 2 – size XL.


Very dense. Almost a zero but not inedible. Not far off. My guess is that the long rest time and/or rise time on the usual (French Menu 10) program was required. Memories of loaf 26.
